Roasted broccoli and Quinoa salad-Quinoa with roasted broccoli, spinach, pistachios, green onions, lemon and Feta cheese. This healthy salad is ideal as a side dish or main course.

If you haven’t tried my favorite fried broccoli recipe yet, what are you waiting for? This is the BEST way to eat Broccoli. I’ve been doing it every day for about a week, you know, to start the new year right. I like to eat roasted broccoli simply or next to each meal, it suits everything. This time I decided to mix things up by making a salad with my roasted broccoli. I’m so glad I did, because this roasted broccoli and Quinoa salad is my new favorite salad. You have to try!

Tips for cooking Quinoa

The basis of the salad is Quinoa. I love Quinoa because it’s healthy, hearty and a good source of protein. I don’t make Wimpy salads. I do not want to leave my salad hungry and I promise that this salad will satisfy you.

Quinoa is easy to prepare and here are my tips for cooking the perfect Quinoa every time!

  • Pour the Quinoa into a fine colander and rinse with cold water.Rinsing removes the natural coating of Quinoa, called saponin, which gives it a soapy or bitter taste. Drain.
  • For one Cup of Quinoa, you will need 2 cups of liquid, water or broth. Cooking Quinoa in the broth will add more flavor, but The water is also fine.
  • In a medium saucepan, mix water or broth, rinsed Quinoa and salt. Bring to a boil. Reduce heat to low and cover with a lid. Cook For 15 Minutes.
  • Remove from heat and let stand for 5 minutes. Remove the lid and fluff the quinoa with a fork. Serve!

Roasted Broccoli And Quinoa Salad

Once the Quinoa is cooked, your broccoli is roasted, you can build the most amazing salad.

Place the Quinoa in a large bowl and add the roasted broccoli, spinach, green onions, a drizzle of olive oil, fresh lemon juice, chopped pistachios and Feta cheese. Season with salt and pepper and ready! The salad is ready and ready to be eaten…my favorite part:) if you need the vegan salad, you can omit the Feta cheese, it will still have a lot of flavor.

Enjoy this salad for a healthy lunch or dinner! It warms up well,so keep the leftovers. And I even ate it cold the next day and it was still good! This salad is an all-around winner!
